Applicants will be expected to evidence lengthy experience and skilled expertise in the preparation of Tandoori and Masala dishes. You must demonstrate a detailed knowledge of ingredients (herbs, spices, oils, vegetables and meat) used and a full variety of cooking techniques as well as dish adaptation and the Tandoori and Masala preparation of meat and poultry. The position is senior and requires applicants to evidence a minimum of three years previous experience. Supervisory and management experience is essential as you will be expected to lead the kitchen team, training and developing junior staff. Ideally, you will have experience of Indian cuisine preparation and kitchen management in a restaurant environment renowned for high quality Indian cuisine. You will be expected to supervise the current chefs and implement/maintain quality control and kitchen hygiene and safety. Previous involvement in menu development and knowledge of the cultural / historical aspects of Tandoori and Masala dishes is required. The closing date for this vacancy is Monday 15th January 2007.
