Applicants will be expected to evidence a complete mastery in the preparation of Tandoori, Masala, Barhandi, Thali, Bangla and Pakistani dishes. You must demonstrate a detailed knowledge of ingredients (herbs, spices, oils, vegetables and meat) used and a full variety of cooking techniques as well as dish adaptation and the preparation of meat and poultry. The position is senior and requires applicants to evidence a minimum of three years previous experience. Supervisory and management experience is essential as you will be expected to lead the kitchen team, training and developing junior staff and reporting on the development and enhancement of our cuisine to the management. Ideally, you will have experience of leading a kitchen team in a restaurant environment renowned for high quality Indian cuisine. You should also have high level experience in external catering for large scale functions. You will be expected to supervise the current chefs and implement / maintain quality control and kitchen hygiene and safety. Previous involvement in menu development and knowledge of the cultural / historical aspects of all of the above dishes is required. The closing date for this vacancy is Monday 15th January 2007.
